In true De La Senne style, they’ve dug into the history books and have brewed a beer they believe is a more traditional beer than the witbiers that are currently on offer. Their research revealed that original Brussels witbier had no spices added at all, instead getting their flavour from the wheat malt, traditional noble hops and yeast.
Pierre Celis is credited with reinvigorating the style with his Hoegaaden that was the benchmark for most of the current witbiers, but De La Senne have gone without the addition of the coriander and curacao orange peel, and added some oats into the mix.
Our beer has the characteristic hazy straw colour, looking light and clean. For a witbier, the foam is fairly minimal and disappears reasonably quickly.
The aroma actually quite strong, though different to most witbiers. There is a lemon citrus and a strong herbal or grassy character. The flavour is equally intriguing, clean and crisp but with a fullness over the tongue that most wits don’t exhibit. We’ll put that down to the oats used in the malt bill. The lemon citrus flavour is strongly present along with a spicy herbal note. The beer finishes quite dry, with a solid lingering bitterness that really is a signature for all the De La Senne beers.
