BOM stands for Belgian Original Maltbakery, and it honours the tradition whereby most old Belgian breweries had their own malt house. Here, the brewery uses all its own malt in every beer.
As well as being (we think) the only Belgian brewery now with its own malt house, owner Bert Van Hecke has a pretty decent CV having worked in breweries including Orval, Boon, St Bernardus, Rodenbach and New Belgium in the US.
It is fair then that we expect quite a decent beer to come out of the BOM brewery, so probably fair that we start with one of the show-off beers in the Full Moon 12.
The beer is a BIG Belgian Quadrupel, with oak roasted malt from the malt house. And for the extra bit of threatre, the malt was roasted at the full moon!
A lighter than normal colour for a quad, the aroma is of dark stone fruits, Belgian yeast and a good dose of oak.
This follow through in the flavour with raisins and dates, sweet Belgian candi sugar, a little roasted malt and the oak giving off some vanilla and wood. Probably a little sharper than the average quad but a tasty beer from this relatively new brewery.
